Prior Lake-Savage Community Education teaches a hands-on lefse class on Monday, November 9, from 6 to 9 p.m. at Twin Oaks Middle School in Prior Lake. The class covers the secrets of mixing, rolling, cooking, storing and serving lefse, the traditional Norwegian treat for holidays, weddings and other special occasions, with stories of its history along the way.
Everyone samples warm lefse with classic fillings, then takes home finished lefse and dough to bake and share with family and friends. Instructor Laurel Severson, a home economics graduate of the University of Minnesota and an avid cookbook collector, has taught Community Education cooking classes for many years. The class is $55 and open to ages 15 and up.
