Brick Oven Bus Pizza Pop-Up at Tractor Supply

The Brick Oven Bus rolls back into Prior Lake on Tuesday, September 15 from 3 to 7 p.m., parked at Tractor Supply on Highway 13. The bus is exactly what it sounds like: a wood-fired brick oven built into a bus, turning out sourdough pizzas on the spot.

The crew calls themselves bakers first. The dough is naturally leavened with a mother starter and cold-fermented for a crisp, chewy crust with a sourdough tang, and the sauce is made from San Marzano tomatoes aged for two months. There is no gluten-free crust. They take cards and cash with exact change.
