Edelweiss Bakery has bought the Fong’s Restaurant building at 4770 Pleasant St. SE in downtown Prior Lake, the bakery said in a Facebook post Friday, Oct. 30. “We’re not ready to share what’s next just yet, but we have some ideas,” it wrote.

Fong’s served its last meal this fall after 32 years at the address. The bakery thanked its owners, Leo and Cindy, and promised to treat the building right. Edelweiss, a bakery by day and an eatery and wine bar in the evening, is at 16186 Main Ave. SE. The post did not say what the purchase means for that location.

The sale had been in the works. A Sept. 22 City Council report said the owner, Le Management Properties, was selling the property with a closing planned for early October. The council cleared old paperwork the title company had flagged, a 2011 sewer-charge payment agreement paid off in 2014 and five tax-increment development agreements, on its consent agenda that night, 5-0.

In the meantime, Collective Grace has said its holiday pop-up will open in the building Thursday, Nov. 5, and stay through Sunday, Dec. 20.

What's next: The bakery says more will come on its plans for the building. It gave no date.
